Watching the summer sun go down over St Martin’s on the Isles of Scilly while enjoying a drink together. It’s one of our favourite ways to spend time as a family.

So we – Neil, Georgie, Oli, Louis and Cosi – set ourselves a challenge. To bottle and bring this unique experience to the world, beyond the home we have had on the island for more than 40 years.

We tested, tasted and taught ourselves from scratch. We learnt, laughed and laboured to create a product we love.

Unlike other producers, we distill using pure molasses to make our rum. Using copper stills in the triple distillation process, we cook up mouthwatering notes of dried fruit, cracked caramel and treacle.

For our Original, we pair these smooth, warming flavours with fresh rock samphire, foraged from the seashore at the bottom of our garden.

And what could be simpler than sea water and sunshine to create the pinch of salt that gives our rum its unique flavour?

Overlooking the daily ebb and flow of the tide, the St Martin’s Daymark continues to guide mariners around the stunning archipelago of the Isles of Scilly.

Arriving by boat or plane, catching the first glimpse of the Daymark is a sign for locals and visitors alike to slip into the island way of life. Simple, relaxed and close to nature – it’s this island spirit which infuses every bottle we make.
